Vegan Chinese Peanut Cookies
These Chinese peanut (not peanut butter) cookies are a really fun treat during Chinese New Years. It's made from ground up roasted peanuts, so the texture is sandy and more like a peanut shortbread cookie rather than a peanut butter cookie. It's going to be an amazing treat for anyone who likes peanuts in their dessert.









Chinese Peanut Cookies Recipe
(Makes 10-12 cookies)
- 1 cup peanuts, reserve 12
- 1/4 cup powdered sugar t
- 1/2 cup all-purpose flour
- 1 tablespoon shortening
- 1/4 cup oil
Directions
- Roast peanuts at 350 degrees Fahrenheit for 10 minutes until fragrant and golden brown. Let cool. Turn oven down to 325 degrees Fahrenheit.
- In a food processor, grind the peanuts until fine. Add in powdered sugar, flour and shortening. Pulse until combined.
- With the food processor running, slowly drizzle in oil.
- Use spatula to press dough together. If dough seems dry, add in a bit more oil.
- Using a cookie scoop, scoop onto sheetpan. Top each cookie with one peanut half.
- Bake for 18-20 minutes until cookies are golden brown. Cool before serving.
