Vegan Brick Toast

Here's a super simple dessert you should consider for summer time. It's called brick toast or in Taiwan, coffin bread, and it's essentially hollowed out French toast filled with all kinds of goodies like fruits and ice cream.

I would say the hardest part about this recipe is finding a loaf of uncut bread. If you have a bread machine and make your own bread, this would be perfect. If you don't though, many supermarket bakeries carry unsliced loaves and Panera also is stocked full of different uncut loaves, although if you are vegan, I believe there are only about 2 choices - and yes, the white loaf does have eggs in it.

Vegan Brick Toast Recipe

(Serves 3-4)

  • 1/2 loaf bread, not sliced
  • 1/2 cup Earth Balance butter
  • 2-3 tablespoons of brown rice syrup, maple syrup or honey (if not vegan)
  • 1/4 cup coconut milk
  • sliced fruits
  • 1-2 scoops vegan ice cream (Ben and Jerry's used)
  • 1 tablespoon powdered peanut butter
  • chocolate syrup (optional)

Directions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Hollow out the insides of the bread. Cut center of bread into cubes.
  3. Melt butter in the microwave and generously brush it over the bread and bread cubes.
  4. Bake the bread and bread cubes for 10-12 minutes until golden brown. Drizzle the bread and cubes with syrup. Let cool.
  5. Once the bread is cool, start layering the inside of the bread with fruits, bread cubes and coconut milk. Top with berries, ice cream and any additional toppings.
