The Best Vegan Chocolate Chip Cookies

I would say that the chocolate chip cookie is the quintessential snack or treat for most Americans and no matter what diet you’re on, it gives you comfort to know that maybe sometime during the day you can look forward to a cookie or two as a pick-me-up.

I’m still on my two week vegan regime and although I actually don’t miss meat all that much (I mean, I’m a bit sick of beans), I certainly cannot go without sweets for that amount of time – though I think I should try. But that got me into thinking of finding a vegan chocolate chip recipe that was maybe even better for you than just having all ingredients be vegan-friendly.

So I did what I do best and tested the heck out of different ingredients to make sure you were getting a cookie, which although you should still eat in moderation, contained whole foods – grains, dates and less added sweeteners than the ones in grocery aisles. I kept the recipe very basic. You could certainly go ahead and add chia seeds, flax or nuts to it, and it would be perfectly delicious.

As I mentioned in the video, the one big thing that could be a little strange tasting is the inclusion of whole-wheat flour entirely. I found that the wheat flavor subsided the second day and also could be masked with maybe a bit more sweetener, but if you’re not sure, I would go half-half first and mix it with some all-purpose flour or maybe even oat flour.

The other thing to keep in mind for this recipe is that the cookie dough is very dry, and you need to form and press the cookies into the shape you want prior to baking it. It did not spread when I baked it. Because the dough is so crumbly, towards the end before you scoop it, feel free to add a bit more coconut milk or oil just until the whole thing comes together. Don’t be afraid to use your hands and press the cookies. If there are cracks prior to baking, there will be cracks after baking, so smooth over what you can with your hands and pack the cookie dough into tight disks.

The Best Vegan Chocolate Chip Cookies

(Makes about 15 cookies)

  • 1/2 cup coconut oil, extra virgin
  • 1/4 cup brown sugar
  • 1/4 cup stevia
  • 1/2 cup dates
  • 1/4 cup coconut milk
  • 1 tablespoon vanilla extract
  • 2 cups whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup vegan chocolate chips

Directions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a food processor or blender, blend the coconut oil, brown sugar, stevia, dates, coconut milk and vanilla extract until smooth. Remember to scrape down the bowl in between.
  3. Mix flour with the baking powder and salt. Add in 2 installments and pulse with food processor just until blended. Add in 1-2 tablespoons of additional coconut milk or oil if mixture is dry.
  4. Empty dough into a medium bowl and combine with chocolate chips.
  5. Using a scoop, pack dough tightly and scoop onto a parchment lined baking sheet. Use palms of hands to flatten the cookie into the desired shape and thickness, smoothing away any cracks.
  6. Bake for 7 - 10 minutes, or until golden brown. Let cool for 10 minutes before eating.
