Shanghai Fried Pork and Cabbage Noodles

Shanghai Fried Noodles is a favorite of mine to order at Chinese restaurants. When dim sum is not filling enough, my family actually orders a dish of this on the side as a "filler" - sort of speak. My mother will regularly bring this dish to parties and it's always been a big hit. I think the reasoning is because the dish has all of the components people like - chewy noodles that are flavored with a sweetened soy sauce base and delicious pork and crunchy cabbage to add to the mix. The whole dish from start to finish takes about a half hour - and that's including marinating the meat! Like a lot of savory Chinese recipes, the amount of each ingredient for flavoring is really by preference. I guess, just remember that you can't take off, but can always put more on. But also, if you don't flavor your dish enough, it will taste bland and won't taste as it was intended. I'm sure y'all will be fine.

I'm going to make the directions ultra simple by doing this dish in stages. You will:

  1. Marinate the meat
  2. Lightly cook the noodles and drain.
  3. Saute the cabbage separately from the soy marinade so the flavors stay separate and not muddled.
  4. Mix the sauce and bring everything together.

Directions

1. Marinate Meat for 10-15 Minutes

####4. Pan Fry the Pork for 4-5 Minutes on Medium-High Heat

Ingredients

(3-4 people)

Marinating the Pork:

  • 1/2 lb pork, shredded into strips
  • 2 cloves garlic, minced
  • 1 tsp oyster sauce (can use soy sauce)
  • 1/2 tsp rice wine
  • 1 tsp corn starch
  • dash of pepper
  • dash of sugar

Sauce for Noodles: - 2 tbsp soy sauce - 1 tbsp oyster soy sauce - 1 tsp sugar - 1 tsp garlic powder

Cabbage and Noodles:

  • 1-2 ramen-sized packages of udon noodles
  • 2 cups shredded cabbage
