Flakey Chinese Scallion Pancakes

Directions

1. Mix half the flour with salt and combine with hot boiling water. Stir until mixed.

#### 2. Put in olive oil, the rest of the flour, and the cold water. Knead to form dough ball.

#### 3. Put dough in refrigerator and let rest for 30 minutes.

#### 4. Meanwhile, chop scallions into small pieces and put aside.

#### 5. Roll dough out to about 1/16" in thickness.

#### 6. Spread a thin layer of shortening on dough.

#### 7. Sprinkle on chopped scallions.

#### 8. Roll dough into a cigarette.

#### 9. Form a spiral by rolling the cigarette and tuck ends under.

#### 10. Let dough rest for several minutes before flattening into a disk with a rolling pin.

14. Dough can be stacked between parchment and frozen during this time.

15. Heat up several tablespoons of oil and pan-fry the pancake over medium to medium-high heat for 3-4 minutes a side.

#### 16. Drain oil by putting pancakes on a paper towel. Serve pancakes with seasoned soy sauce (recipe below).

Chinese Scallion Pancakes

(Serves 4)

  • 3 cups of all-purpose flour
  • 2 teaspoon salt
  • 1 cup hot water
  • ½ cup of cold water (more if dough is dry)
  • 1 tablespoon olive oil (for dough)
  • 3 tablespoons of lard or vegetable shortening OR 1/2 cup olive oil
  • half a bunch of scallions

Seasoned Soy Sauce:

  • 1 teaspoon soy sauce
  • 2 teaspoons water
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon vinegar
  • small pinch of salt
  • small pinch sugar
